Chef Vic as his friends and colleges call him, started his culinary studies at INAFORP, currently INADEH, a Governmental Technical Institute in his home town, Panama City, Panama, while studying at the same time in a private institute and a local University, yes! love to study.
He traveled to Fort Myers Beach, Florida, US, where he starts his internship with the American Hospitality Academy and the Boykin Management Group at a beautiful Resort (Pink Shell), which opens the door for his studies with the American Hotel & Lodging Educational Institute as part of the Florida Restaurant & Lodging Association. He specializes in Gourmet Cooking and Catering at Ashworth University, as well In Pastry with Wilton International School. Been Florida, Atlanta and Chicago where all this amazing adventure started, as well Vic has a diploma in Culinary Art from Escoffier International School.
Official member of the American Culinary Federation, one of the most recognized associations in the world with whom he keep learning and growing in the amazing kitchen world.
After few years and clear with what he wants as a career, travel back to his country and started working for a very prestigious Cruise Line. From zero again and after few years, He become one of the Celebrity Destinations Chef occupying the position of Executive Chef. Among its functions were being in charge of 16 kitchens, 12 restaurants and a brigade of 250 chefs and cooks, in the preparation of more than 18 thousand meals a day approximately and depending on the type of ships, as well being part of the Chef assigned for special projects to the 3 yachts of Celebrity Cruises, in the Galapagos Islands, Ecuador (2016 – 2017), and has the privilege to present that great menus in the famous Taste of London 2017 for the same Cruise Line.
From all this experience what he enjoy the most is the creation of the CHEFS TABLES, (click in his recipes)
At this moment he still working for Celebrity cruises now with a different roll, Food and Beverage Director, in charge of the operation for Restaurants, Bars and Kitchens to provide and outstanding service to thousands of passangers every day around the world.
Part of his extracurricular activities has been named Manager of the Year in the Celebrity Equinox 2014, Celebrity of the Moment in the Celebrity Constellation, Best Recipe Category Rib Chops of Le Quebecois Grain-Fed, Best Appetizer in the Taste of the Beach in Fort Myers for the Pink Shell Resort and the best Pastry in the same competition. Nominated to the Elaine McLaughlin Outstanding Hospitality Service Awards. In his free time, apart from cooking, he is dedicated to visiting local markets in different cities of the world and giving basic cooking classes for people who want to learn about this beautiful art, as well as offering their free time to different associations that help Children with special needs and disabilities.
